I am back after the kid's Half Term Break. During the course of the week, my husband and I have tried an experiment with our littlest one. We believe that she is having a hard time processing milk, so we have taken her off all dairy for the past week. I must say she is much more pleasant and happier, but more importantly we have eliminated her random crying fits and tummy aches.
Now I am not 100% certain this is dairy free because I am still learning about hidden dairy, but there is no obvious signs of diary in this recipe.
I had a sponge cake mix that required an egg and milk. Now I must admit these mixes on their own make a terrible sponge cake. To give more flavor to the sponge cake mix I added a box of pudding, 1 cup of pumpkin, and a 1/4 cup of oil.
These had a nice hint of pumpkin taste, and they were soft and moist. The kids ate them up quickly, so they must have been good.

Oh the poor little thing! Dairy is a tough one - I'm not sure we'd survive that in our house!
